
 
Oyster Farm Tours
 |
• An Oyster Farm Tour is available for $15 per person,
minimum of 2 persons or group rate of $50 (four people) and includes sampling
of cooked oysters in the summer and raw or cooked oysters in the spring and
fall . The tour is ¾ of
an hour long and demonstrates how oysters are grown from seed to maturity in
deep water and on the beach. Roger Thorn, the owner/farmer, will host this
informative session about the environmentally sound and sustainable business
of aquaculture.
Tour Start Time: 6 PM, one week notice required. • Thynne
Island Seafoods has won 2 Critics Choice Awards in 1999 & 2000 & a Bronze Medal
in 2003 at the annual Liberty Wine Merchants "Oyster & Wine Festival" for our
European Flat Oyster, "Thynne Island Flats".

Aquaculture:
Okeover, Malaspina, Lancelot and Theodosia Inlets are interconnected
and join to Desolation Sound via Malaspina Inlet. Pristine water
quality and warm water
temperature has led to the development of a thriving aquaculture/shellfish
industry. There are 7 species of oysters, clams and mussels cultivated
on approximately 40 shellfish farms in the inlet complex. Shellfish
from these farms are exported
to fine restaurants in Canada, USA & Southeast Asia. The aquaculture industry
has a 50 year history in this area but production has increased with more
refined hatchery and husbandry techniques. The inlets were traditionally
used by the
Sliammon Salish natives for shellfish and fish harvesting.

Shellfish Feast
Enjoy a shellfish feast of farm grown oysters, clams
and mussels (salmon, cod & prawns when available) garnished with organically
grown produce. The shellfish are from Thynne Island Seafoods & local
waters and are prepared by Chef Susan Canning. The shellfish feast will offer
a minimum selection of 5 dishes and will change with availability of seafood.
Some sample dishes:
Oysters Rockefeller, Oysters Grilled in Salsa w/ jalapeno cheese, Locally
Smoked Oyster Pate, Oyster Seviche, Oyster Baguette, Grilled Oysters
w/pesto, Oven
Baked Parmesan Oysters, Clams in Black Bean Sauce, Clams steamed with butter & garlic,
Mussels with Pernod, Steamed Mussels on the Half Shell w/fresh Tomato Salsa,
Mussels baked w/ garlic & Asiago
Cheese, Barbequed Planked Salmon, Prawns w/Pernod or Prawns w/Garlic Butter.
• Price is $25 per person and requires one week notice.
